Start with tender breasts but not too young. Get them home and if possible add wine, carefully though, not too much. Allow the fresh chicken too acclimate to room temperature while selecting some good music. Smoke your bird with some quality herbs and then rub oil lightly into the skin. Is the oven hot yet? It should be. When roasted thoroughly, the skin should be fully golden brown and ready to satisy a voracious appetite. Take your time and savor each deicious morsel. It is ok to lick those drippings!

Remove skin, wash the breast, pat them dry, coat with olive oil, brush with a little honey and squeeze a fresh orange or lemon over them with a little sprinkle of pepper or marinade in 2 tablespoons honey, 2 tablespoons soy sauce, 1/4 cup orange juice and a little pepper for 2+ hours. Bake in 350 oven for 1 hr. 30 min uncovered. Baste as you like. Mmmmm...goes great with rice or a nice salad.
