Pickled Corn

Thanks for all the advice on pickled corn. I've made it in past years and it's turned out great. But can't seem to get it right anymore. I've had a hysterectomy so the period theory doesn't pertain, and I've tried it by going by the signs. The salt is probably a couple of years old. Does salt go bad? I boil the corn for 9 min. and chill it in ice water. I add one cup of salt to 1 gal water. And by the way, that theory about having your period when pickling is true. It happened to a friend of mine. Her corn was great one day, the next she had her period, stuck her hand in to get a piece of corn and then the next day when she went for a piece of corn, it was rotten.

I love pickled beans and pickled corn, but deliver me from being in the kitchen whilst it's cooking!

Years ago my wife helped her grandmother pickle corn and beans while she was on her period, the whole batch turned out to be bad.

it could be that you also water bathed or pressure canned it for to long...that certainly can make the corn soft.

That corrects Brarpatch, that is what I had just stated before your post. Thanks for verify that.

If a lady was around that was on her "period' will make it not pickle.

You tried to pickle in the Wrong Sign. Its like with making Kraut, if you do it in the wrong Sing it will not make and will turn brown and Rot.

Also, I know this sounds Crazy, but if you are a Woman and you are in you "PIP" the same thing will happen. If you dont believe me ask some Old Timers that grows Gardens.

How old is the pickling salt?

If your corn was ready to be picked it should be ok....so the only thing left is the salt itself.

or how long did you cook the corn?

Can anyone tell me why my pickled corn would turn out having soft kernels and not pickled...just salty. I've been making it for years, never changed the way I make it, but for the past 2 yrs. I've made several batches and none have pickled at all. I use pickling salt. Thanks.
