Green tomato pie:

You just layer thin sliced green tomatoes in an unbaked pie shell, sprinkle with a spoonful of sugar, some cinnamon and a teaspoon of apple cider vinegar. Layer on up, put a cover on it and bake it. Talk about good!

You may want to find a recipe online for green tomato pie to get more approximate measurements.

I failed to mention Chow Chow made with green tomatoes. Really good with dried beans, peas, etc. I also like it as a small side with roasted pork and on hot dogs and hamburgers.

Are you gonna fry them green tomatoes to eat or do like a Chef and put so many ingredients on them they have be washed down with buttermilk. More than 1 other ingredient besides salt and pepper added to anything makes it soup.

When I fry green tomatoes or squash for that matter, I use the recipe Whitehawk put up..

1/2 cup APF
1/2 cup corn meal
Salt
Pepper
and the only difference.... a generous amount of creole seasoning.

Soooo good.

Wash and slice them, plop both sides down on some yellow cornmeal that has been salted and peppered and fry them.

Fried green tomatoes are good with remoulade sauce. I use the recipe below, but there are simpler ones out there.

seriously... line your saut� pan with olive oil and put it to just above medium. Take an egg and beat it with some Cajun seasoning, salt, pepper, and minced fresh basil. Take some Italian style bread crumbs and mix in some parmesan cheese and a dash of flour and some pepper. (for extra zing use lemon pepper)

Slice your tomatoes into 1/4 inch slices and drench them in the egg mixture. Coat them after with the bread crump mixture. Now, saut� them for a couple of minutes on each side in the heated oil until they are light brown. Now eat them.

Wash, slice, roll in flour, and put into a frying pan with oil. Fry until lightly brown. Salt to taste and enjoy.

Pull the tomatoes off and set them in a sunny, dry place. They will still ripen.

Never met a fried green tomato that I didn't luv. Fix just like fried yellow squash.

Wrap each tomato individually in a brown paper bag and store in a cool, dark, dry place. Some varieties do better than others, but, some will last for weeks.

First of all, It is time for vines to "start" to die. That doesn't mean the tomatoes won't ripen if you leave them on the vine for awhile.
The tomato doesn't need the vine anymore except as something to hang on. What is necessary for the tomato, is now contained withing the tomato. But...

If you eventually still have some green tomatoes, slice them, put on plates with slices separated, use wax paper between layers, freeze solid.

Take the individual slices and put into freezer bags. You can cook them this winter using as many slices as you need.

I salt, pepper, and run through some flour, and using just a small amount of oil in pan, fry slowly until brown, turn, and do the other side.

Slice several green tomatoes about 1/3" thick and soak to cover in buttermilk (about 30 minutes)
Drain slightly,

Dredge tomato slices in a mixture of:

1/2 C flour
1/2 cup self rising corn meal or corn meal mix You can substitute Panco Crumbs or tempura batter)
1 tsp ground black pepper
1 tsp salt

Place on cookie sheet or pie pans and put in freezer. Leave in freezer at least 1 hour, if possible.

Heat sufficient Canola oil (to 325 degrees or so) in a heavy skillet or, preferably in a cast iron pan (have a lid handy to keep you from being splashed with boiling oil.

Fry until tomatoes float, turn over and fry other sides.

Drain on paper towels,

Serve hot with sprinkled pizza or spaghetti sauce and fresh, shredded Parmesan or Mozzarella cheese.

If you prefer, you can bake these in oven at 375 degrees on foil covered, pam sprayed cookie sheet or similar pan.

Note: This same recipe (fried or baked) is also delicious with egg plant, squash, okra, stringed unsnapped green beans, or zucchini.

Wash, quarter, and pack raw green tomatoes into pint jars. Add to each jar 2 or 3 small whole pods hot pepper, and 1/4 bell pepper. Make a brime of 2 parts vinegar, 1 part sugar, and 1 part water. Heat until sugar melts, then pour over packed jars. Process 15 minutes in a water bath. ( I usually slice the hot peppers up into strips. Don't like mine too hot).


Pinto's beans, corn bread and a jar of these. Soooooo good.
