I didn't go back through all of these to see if its been posted yet but a grilled portobello mushroom is a good replacement for a burger, fill it with cheese and its good to go. Better yet skip the bun.

This recipe is good for burgers too.. I always leave out the black olives.

make you a big ole turkey burger, 97% fat free, with salt and pepper only,

take tomatoes, spring onions, jalopena peppers (cut out seeds), bunch of cilantro, 2 squeezed limes & salt, mixed these in a blender or food processor

Put over Burger, eat all you want, NO CALORIES! NO FAT!!!! EAT ALL YOU WANT

You can make just about anything with ground turkey that you make with hamburger. Just dissolve a couple of beef bullion cubes in about 1/4 cup hot water & add to the meat. I know it's higher sodium but it sure does help the flavor.

I use this for mini turkey meatloafs, chili and spaghetti.

Eggplant is gud. Brush with a little evoo, salt and pepper, and grill it on the grill...

no moving, its not like spaghetti squash. it's solid but soft, not like acorn or butternut. not seedy like summer squash. it's actually very versatile because it is solid. it can be fried and used much like a hot meatball sandwich but without the meat. can be stacked and baked like lasagna. can be cubed and added to stewed tomatoes or put in soups.

Elmo, is eggplant anything like spaghetti squash...when baked it comes apart in strings like noodles? We used to replace spaghetti squash for noodles when making spaghetti. It was really good. Haven't thought about it in awhile.

Egg plant is similar in taste to squash but closer to meat.

Well me and Zombie caught some and decided to keep them to eat. I can still hear them fighting to live in the cold ice water. I feel bad now. They were good though!!
