This recipe uses a cake mix as a base. This isn't technically "from scratch" but it is really, really good.

1 pkg. yellow Cake mix
1 pkg. Vanilla Jello Instant Pudding
1 1/3 cup water
4 eggs
1/4 cup oil
2 cups Bakers angel flake Coconut
1 cup chopped Walnuts or Pecans

Coconut Cream Cheese Frosting:
4 Tbsp. Butter or Margarine
2 cups Coconut
1 pkg. Cream Cheese
2 Tbsp. Milk
1/2 tsp. Vanilla
3 1/2 cups sifted Confectioners Sugar

Blend cake mix, pudding, water, eggs and oil in large mixing bowl. Beat at medium speed 4 minutes. Stir in coconut and nuts. Pour into 3 greased and floured 9 pans. Bake at 350 degrees for 35 minutes or until cake is done. Cool in pans 15 minutes. Remove and cool over rack. Fill and frost with coconut cream cheese frosting, below.

Coconut Cream Cheese Frosting:

Melt 2 tablespoons butter in skillet. Add coconut. Stir constantly on low heat until golden brown. Spread coconut on paper towel until cool. Cream 2 tablespoons butter with cream cheese. Add milk. Beat in sugar. Gradually blend in vanilla. Stir in 1 1/2 cup of coconut. Spread cake layers. Sprinkle remaining coconut on top of cake.

yes, i have made this cake for many years. made it at our church dinner and everyone wiped it out. joe brewer loved it!!!
