No Bake Chocolate Egg Nog Pie

An instant Christmas favorite!


For the crust:
1 1/4 cups graham cracker crumbs
1/4 cup margarine or butter, melted
1/4 cup sugar

Filling:
2 cups eggnog
1 cup chocolate chips
1 tbsp unflavored gelatin
1/4 cup milk
1 cup heavy cream, whipped


Mix the graham cracker crumbs, sugar, and butter in a bowl until well moistened. Press the mixture in to a pie plate to form the crust.

Heat the egg nog to boiling over a low heat in the top part of a double boiler on the stovetop. Stir constantly to prevent burning or boiling over.

Add the chocolate chips to the hot egg nog. Stir to blend the melted chocolate into the egg nog, then add the softened gelatin and milk. Keep stirring until the gelatin is fully dissolved.

Remove from heat and let cool completely to room temperature.

Fold in the whipped cream gently, when the mixture begins to thicken. Pour pie filling into the previously prepared pie shell and level gently.

Refrigerate thoroughly. It's best to cover with plastic cling film while cooling.

When serving, we like to add whipped cream!
